Chef Leon Rothera and CityDietitians’ own Dr Bridgette Wilson have teamed up to present a video series demonstrating recipes for a low FODMAP diet. In these videos, they offer useful tips to meet all of your nutrient needs while restricting the diet to improve gut symptoms for IBS. These recipes are also useful for lactose or gluten-free diets.
Recipe
Serves 2
250g salmon
Handful of spinach leaves
1 tbsp dried nori seaweed soaked in hot water
400g cooked quinoa (200g dry weight)
4 sliced radishes
1 grated carrot (unpeeled)
150g bean sprouts
DRESSING
2 tbsp soy sauce
1 tsp sesame oil
1 tsp tahini
1 tsp fish sauce
1 tsp golden syrup
Half a lime fresh
Red chili
Fresh coriander
