This summer or autumn recipe is both tasty and healthy!
Here's what you'll need.
Ingredients:
Butternut squash
Lentils
Soft goat’s cheese
Quinoa
Baby spinach
Beetroot
Pumpkin seeds
Honey
Soy sauce
Method:
1. Cook the beetroot till soft. Skin and chop the butternut squash and cooked beetroot. Mix them together and bathe them in honey soy sauce.
2. Roast the veggie mix in the oven for about 20 minutes till soft. Cook the quinoa and lentils and mix them together.
3. Add fresh baby spinach and mix everything together. Crumble soft goat’s cheese on top. Roast pumpkin seeds and sprinkle on top.
Choose your favourite bowl to serve and enjoy!
